Brazilian Kuerten, the 1997, 2000 and 2001 winner, saved four match points before bowing to the number 28 seed after two hours and 46 minutes.
Robredo, who beat world number one Lleyton Hewitt in the previous round, had never before made it to the last eight of a grand slam tournament.
"It's something amazing I had a lot of pressure and I'm happy to have won" Robredo said just after the match.
The Spaniard played extremely well taking advantage of Guga's unforced errors.
After levelling the match to one set all, with a blistering 6-1, Guga seemed favourite to take home the win but the three times champion suddenly faded away making Robredo's attack a piece of cake.
Robredo set the pace and led the way throughout the rest of the match with his magical drop shots that surprised Guga every single time.
The Brazilian never let go and kept his hopes up high when at 4-5 he brushed away two match points with beautiful forehands before bowing out in the third one following a stunning lob from Robredo.
Kuerten, seeded 15th, also lost in the fourth round in Paris last year to eventual champion Albert Costa.
This is the first time in history that four Spanish players will pllay in the quarter-finals at Roland Garros, Robredo, Albert Costa, Carlos Moyá and Juan Carlos Ferrero. Their other best show was last year where three of them reached the last eight, Albert Costa, Juan Carlos Ferrero and Alex Corretja.
