World number 37 Giorgi shocked tournament-favourite Agnieszka Radwanska in the semi-final but couldn’t produce her best against eighth-seed Schmiedlova.
Giorgi struggled with her serve in particular, winning just 45% of points on her first serve and 33% on her second during the first set.
Schmiedlova’s only previous WTA final appearance ended in a 6-7, 1-6 defeat to Italian Sara Errani at the Rio Open, so beating her compatriot will have brought no small amount of pleasure.
Giorgi fell at the final hurdle in the Polish city last year, too, when she squandered a match point against France's Alize Cornet so the wait for her first WTA title continues.
20-year-old Schmiedlova scoops just over €40,000 as well as the trophy to add to a very satisfying week.
