Eriksen set up Toby Alderweireld in the first half, before scoring his own in the second and teeing up Mounir El Hamdaoui to kill the game off.
Despite the scoreline, Ajax were second best for large periods of the match and were let off the hook early in the second half when Marcin Wasilewski missed a penalty over the bar, after Eyong Enoh brought down Mbark Boussoufa.
Ajax are also indebted to goalkeeper Maarten Stekelenburg as he denied the hosts on a number of occasions, in particular pulling off a cracking save off Boussoufa's free-kick from 30-yards out.
The return leg will take place at the Amsterdam Arena next Thursday.
